Here’s a fun festive fortune cookie recipe to make for Christmas.
Ingredients (for 10 persons)
- 25 ml brewed Jingle Java Coffee
- 75 g marzipan
- 125 g egg white
- 125 g butter
- 125 g icing sugar
- 125 g plain flour
- 1/2 vanilla pod
- 1 coffee spoon of ground coffee
- Messages on small paper strips
Preparation
- Scrape out the seeds from the vanilla pod.
- Combine the marzipan with the vanilla seeds, ground coffee and ristretto and knead the mixture together.
- Sieve together the flour and icing sugar and add to the mixture.
- Melt the butter and add it along with the egg white.
- Stir the mixture slowly with a whisk or food processor to form a viscous dough.
- Cover the dough with cling wrap and chill in the refrigerator for a few hours.
- Take the chilled dough out of the refrigerator and, using a tablespoon, form it into little flat discs.
- Place the discs of dough on a baking tray, leaving enough space between them.
- Bake at 180° until the cookies have some colour.
- Remove the cookies from the tray with a cake slice and place a fun Christmas paper message in the centre of each.
- On a board, form the cookies into fortune cookie shapes. To do this, fold each into a half-moon shape and then curve in the middle over the edge of a bowl.
